Ingredients

  • Spicy Mustard Sauce:
  • 3 Tbsp spicy Brown Mustard
  • 1/4 cup ketchup
  • 1 Tbsp mayonnaise
  • 2 tsp steak sauce
  • 2 tsp Worcestershire Sauce
  • dash of hot sauce
  • Tomato Garlic Cream:
  • 1 Tbsp butter
  • 3 garlic cloves, sliced
  • 1 Tbsp white wine vinegar
  • 2 Tbsp tomato paste
  • 1 1/2 cup heavy cream
  • 1/2 tsp kosher salt
  • Yogurt Cilantro Oil:
  • 1 bunch cilantro
  • 3/4 cup olive oil
  • 1 cup plain yogurt
  • 1 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1 grated garlic clove
  • Juice of 1 lemon
  • 1/4 tsp kosher salt

Preparation

Step 1

Spicy Mustard Sauce:
Combine all ingredients in a small bowl or squeeze bottle.

Tomato Garlic Cream:
Melt butter in saucepan over medium heat; add garlic and cook 3 minutes. Stir in vinegar, tomato paste, heavy cream and salt. Bring to a simmer and reduce to 1 cup, about 10 minutes. Strain through a fine mesh sieve, then transfer to small bowl or squeeze bottle.

Yogurt Cilantro Oil:
Blanch cilantro in boiling water for 10 seconds. Drain and cool in ice water. Puree the cilantro in food processor, slowly add the olive oil; season with salt. Strain through a fine mesh sieve; set aside. Whisk yogurt, cumin, coriander, garlic, lemon juice, and 1/4 tsp kosher salt. Spoon yogurt mixture onto pork or chicken, then drizzle with the cilantro oil.
