Veggies, Beef, and Polenta

Ingredients

  • 1/3 cup corn meal
  • 3/4 lbs ground beef
  • 1 onion, minced
  • 1 zucchini, minced
  • 1 carrot, minced
  • 1 celery stalk, minced
  • 1 garlic clove, minced
  • 1 red bell pepper, minced
  • 2 t chili powder
  • 1 t cumin
  • 1/2 t cinnamon
  • 1 c salsa
  • 1/2 c frozen corn
  • 2 T ketchup
  • 1/3 c cheddar cheese, shredded

Preparation

Step 1

1) Bring 1 cup water to a boil. Whisk in the corn meal. Heat over low heat for 5 min. Spread in a greased casserole dish and place in freezer.

2) Brown the beef.

3) In a separate pan, saute the onion, zucchini, carrot, celery, garlic, and pepper for 5 min. Add the chili powder, cumin and cinnamon and saute 1 min.

4) Stir in the beef, salsa, corn, and ketchup.

5) Pour into a casserole dish. Slice the polenta and place on top. Sprinkle with cheese.

6) Bake 10 min at 400 degrees.
