Ingredients

  • 3-4 lbs pork loin or roast
  • 1/2 red onion, diced
  • 5 or 6 roasted, peeled and diced green chiles (or one small can)
  • 1 seeded and diced jalopeno, optional
  • 4 cloves garlic, minced
  • Juice of two limes and zest of one
  • 2 T. ground cumin
  • 2 T. fresh chopped cilantro
  • 2 t. Mexican oregano
  • 1 t. cinnamon
  • 2 t. sea salt
  • 1 t. pepper

Step 1

Put all ingredients in a crockpot and cook on low for 6-8 hours. Serve with tortillas or lettuce wraps.
