Brussels Sprouts With Bacon In Cider Vinaigrette

- 11/2 lb. Brussels Sprouts
- 8 Slices Bacon
- 3 Tbsp. Cider Vinegar
- 2 tsp. Sugar
- 1 tsp. Dijon Mustard
- 1/2 tsp. Pepper
- 1/4 tsp. Salt
- 1/3 C. Olive Oil

Preparation
Step 1
Trim root ends from brussels sprouts. Cut half the sprouts in half & quarter the rest. Cook the bacon in lg. skillet over med-high heat for 4-5 min, or till crisp. Add sprouts & cook, stirring for 4 min. Add 1 Tbsp. of water; cover, reduce heat to low & cook for 5 min. or till sprouts are tender-crisp. Meanwhile, in a sm. bowl, whisk together vinegar, sugar, mustard, pepper & salt. Slowly whisk in oil. Pour vinaigrette over sprouts mixture in skillet & toss to coat. Serve warm.
