Ingredients

  • 1/3 Cup Celery, chopped
  • 1/3 Cup Onion, chopped
  • 2 Tbs. Butter
  • 4 Cups Potatoes, pared and diced
  • 3 Cups Chicken broth
  • 2 Cups Milk
  • 1 1/2 tsp. Salt
  • Dash of Paprika
  • 1/4 tsp. Pepper
  • 2 Cups Sharp Cheddar Cheese, shredded
  • French Fried Onions or croutons for garnish

Step 1

In a large saucepan, saute celery and onions in butter till tender. Add potatoes and broth. Simmer till potatoes are tender; stir in milk and seasonings; heat through. Add cheese, stirring until melted. Garnish. Yield: 7 1/2 Cups
