Ingredients

  • 6 to 8 Granny Smith Apples; peeled and sliced
  • 1 1/2 tablespoon cinnamon sugar (1 1/2 tablespoon sugar plus 1/2 teaspoons cinnamon)
  • 3 large eggs
  • 1 1/2 cups superfine white sugar ( or process your sugar to fine)
  • 1 1/2 cups vegetable or canola oil
  • 3 teaspoons vanilla extract
  • 1 1/2 cup all purpose flour
  • 1 1/2 tablespoon cinnamon sugar as above to sprinkle on top of the cake

Step 1

Preheat oven to 350. Spray 9 1/2 springform pan with nonstick spray. Line bottom with a round of parchment paper and then spray again.
Layer the apple slices in the pan until they come up about 2/3 of the way up the sides. Sprinkle with first 1 1/2 tablespoon cinnamon sugar.
Prepare the batter by beating the eggs and superfine sugar until light and fluffy. Add oil and the vanilla and beat well, then stir in flour. Pour batter over the apples and sprinkle with the second amount of cinnamon and sugar. Tap pan on the counter to let the batter sink down into the apples.
Bake 1 hour and 20 minutes or until toothpick comes out clean. Cool completely in the pan. If you remove to early it will fall apart. Refrigerate the cake until serving. Serve with ice cream . Can warm slices before putting ice cream on it.
