Ingredients

    * 4 boneless skinless chicken breast halves (4 ounces each)

    * 1 jar (16 ounces) chunky salsa

    * 1 cup dried cranberries

    * 2 cups hot cooked couscous

Directions

* In a large nonstick skillet, saute chicken in oil until browned on both sides. * In a small bowl, combine the salsa, cranberries, water, honey, garlic, cinnamon and cumin; mix well. Pour over chicken. Cover and cook over medium-low heat for 10-15 minutes or until a meat thermometer reads 170°. Serve with couscous. Sprinkle with almonds. Yield: 4 servings.
