Stuffed Bell Pepper Casserole

  • 4 Bell Pepper different colors, cut into bite size pieces
  • 2 c cooked rice
  • 1 1/2 T oil
  • 1 medium onion chopped
  • 4 cloves garlic chopped
  • 1 pound meat ( I use ground turkey)
  • 14 oz diced tomatoes, drained ( I use the seasoned tomatoes)
  • 1 1/2 c smoked mozzarella shredded cheese
  • 2 T basil
  • salt and pepper
  • bread crumbs


Servings 6


Step 1

Add 1 T oil to skillet and cook meat, remove to a container. Add 1/2 T oil saute onion, garlic bell peppers for about 3 minutes until a little soft. Add meat back in with cooked rice, tomatoes,basil, salt and pepper. Spray large pyrex dish. Add mixture, top with cheese and bread crumbs. Bake at 350 degrees for 30 minutes.
