  • 1 1 1 T olive oil
  • 2 2 stalks 2 medium stalks celery, finely chopped
  • 1 1 1 small onion, finely chopped
  • 2 2 2 garlic cloves, finely chopped
  • 3/4 3/4 3/4 t cumin
  • 1 1/2 1 1/2 1/2 lb ground turkey breast
  • 1/3 1/3 1/3 c fresh bread crumbs
  • 1/3 1/3 1/3 c fat free milk
  • 1/3 1/3 1/3 c bottled salsa
  • 1 1 1 large egg white
  • 1/2 1/2 1/2 t salt
  • 1/2 1/2 1/2 t pepper
  • 1/4 1/4 1/4 c ketchup
  • 1 1 1 t Dijon

Preparation

Step 1

In nonstick skillet heat oil over medium heat. Add celery and onion; cook, stirring often until vegetables are tender, about 10 minutes. Add garlic and cumin; cook stirring, 30 seconds. Set vegetable mixture aside to cool slightly. Preheat oven to 350. In larbe bowl, with hands, mix vegetable mixture, ground turkey, bread crumbs, milk, salsa, egg white, salt, and pepper until well combined but not overmixed. In small bowl, mix ketchup, and mustard, set aside. Shape and place in loaf pan. Spread ketchup mixture over top. Bake about 1 hour until meat thermometer registers 160. Let stand 10 minutes. 8 servings 145 calories
