Apricot Bread Pudding

  • Nonstick butter flavored spray, 1/2 c apricot fruit sugar free spread, 6 slices bread, 1 c eggbeaters, 1 can evaporated skim milk, 1/4 c brown sugar, 1 t vanilla

Step 1

Spread jam over 1 side of bread. Cut into pieces (1 inch squares). Layer bread apread side up in casserole. Mix other ingredients and pour over top. Let stand 30 minutes. Bake 1 hour at 350.
