Ingredients
- 2 Tbsp. Olive Oil
- 2 Tbsp. Dijon Mustard
- 1 Beef Tenderloin ( about 4-5 lbs. )
- 2 tsp. Kosher Salt
- Coarsely Ground Black Pepper

Preparation
Step 1
Preheat oven to 450. Combine mustard & olive oil, & rub all over tenderloin. Sprinkle with salt & pepper, & place on a rack in a lg. roasting pan. Roast 15 min, then reduce heat to 375 & roast another 30-45 min. or till internal temp. is 130 ( for rare to med-rare ). Beef will continue to cook as it rests. Remove from oven, cover loosely with foil & let rest at least 20 min. before carving into thin slices. Serve warm or at room temperature with grainy mustard.
