Ingredients

  • 2 Cups Water
  • 2 Cups Potatoes, diced
  • 1/2 Cup Carrots, diced
  • 1/2 Cup Celery, diced
  • 1/4 Cup Onions, chopped
  • 1 tsp. Salt
  • 1/4 tsp. Black Pepper
  • 1/4 Cup Butter
  • 1/4 Cup Flour
  • 2 Cups Milk
  • 2 Cups Cheddar Cheese, grated

Preparation

Step 1

Combine water, potatoes, carrots, celery, onions, salt and pepper in a large kettle. Boil 10-12 minutes. Meanwhile, melt butter. Add flour and stir until smooth. Slowly add milk; cook until thickened. Add cheese and stir until melted. Add cheese sauce to undrained vegetables. Heat thoroughly and enjoy. Variation: Add 1 Cup diced, cooked, chicken, turkey or ham to the cheese sauce.
