Ingredients

  • Topping Mixture:
  • 1 1/4 C. brown sugar
  • 1/2 C. oil
  • 1 egg
  • 1/2 C. milk (plus 1 tsp. vinegar
  • 1 tsp. soda
  • 1 tsp baking powder
  • 1/2 tsp. salt
  • 2 1/2 C. flour
  • 2 tsp. vanilla
  • 1 1/2 C. rhubarb (cut up)
  • 1/2 tsp. cinnamon
  • 1/2 C. sugar
  • 1 T. butter or oleo

Preparation

Step 1

Mix first 3 ingredients; add dry ingredients alternately with milk. Add vanilla and rhubarb, and stir by hand.
Fill muffin liners 3/4 full. Top with topping mixture. Bake 20-25 minutes at 375 degrees.
