Ingredients
- Topping Mixture:
- 1 1/4 C. brown sugar
- 1/2 C. oil
- 1 egg
- 1/2 C. milk (plus 1 tsp. vinegar
- 1 tsp. soda
- 1 tsp baking powder
- 1/2 tsp. salt
- 2 1/2 C. flour
- 2 tsp. vanilla
- 1 1/2 C. rhubarb (cut up)
- 1/2 tsp. cinnamon
- 1/2 C. sugar
- 1 T. butter or oleo

Preparation
Step 1
Mix first 3 ingredients; add dry ingredients alternately with milk. Add vanilla and rhubarb, and stir by hand.
Fill muffin liners 3/4 full. Top with topping mixture. Bake 20-25 minutes at 375 degrees.
