Warm Butternut Squash Salad

Ingredients

  • 1 1/2 lbs. butternut squash
  • 2 Tb olive oil
  • 1 Tb maple syrup
  • 3 Tb craisins
  • 3/4 cup apple juice
  • 2 Tb cider vinegar
  • 2 Tb shallots - minced
  • 2 Tb dijon mustard
  • 1/2 cup olive oil
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 4 oz. arugula
  • 1/2 cup walnut halves - toasted

Preparation

Step 1

Combine butternut squash, 2 Tb olive oil and maple syrup.
Bake at 450 degrees for 30 minutes.
Add craisins and roast 5 more minutes.
Combine apple juice, cider vinegar and shallots.
Boil over medium high heat 6-8 minutes until reduced to 1/4 cup.
Combine with olive oil, mustard, salt and pepper.
Pour over arugula and add toasted walnuts.
