Ingredients

  • 8 ( 1/2-in. thick ) Slices Sweet Onion
  • 1/3 C. Balsamic Vinegar
  • 1/4 C. Extra-Virgin Olive Oil
  • 11/2 tsp. Paprika
  • 1 tsp. Salt
  • 1/2 tsp. Freshly Ground Black Pepper
  • 1 ( 8-oz. ) Pkg. Fresh Mozzarella Cheese, cut into 4 ( 1/2-in. thick ) Slices
  • 8 Lg. Fresh Basil Leaves
  • 4 ( 1/2-in. thick ) Tomato Slices
  • Fresh Basil Sprigs for Garnish

Step 1

Arrange onion slices in a single layer in a 13x9-in. baking dish. In a sm. bowl stir together vinegar & next 4 ingredients; pour marinade over onion slices. Cover & refrigerate for 8 hrs, turning once. Remove onions from dish, reserving marinade. Pat onions dry with paper towels, & lightly spray with cooking spray. With lid closed, grill the onion slices over direct med-heat till crisp-tender & golden, 6-8 min, turning once. Layer 4 grilled onion slices with cheese, basil & tomato slices; top with remaining grilled onion slices. Grill the onion stacks over direct med-high heat till cheese melts, 2-3 min. Serve warm with the reserved marinade. Garnish, if desired. Serve.
