Pork Roast with Sauerkraut

  • 1 (32-ounce) package sauerkraut, undrained
  • 1/2 lb bacon diced and cooked until crisp
  • 1 medium apple, cored, peeled, cubed
  • 1/4 cup chopped onion
  • 2 tablespoons firmly packed brown sugar
  • 1/2 cup of apple cider or apple juice
  • 1 (2 to 3-pound) boneless pork roast
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons bacon fat

Preparation

Step 1

Heat oven to 350°F. Combine sauerkraut, apple, onion, brown sugar and bacon in large bowl; set aside.

Sprinkle pork roast with salt and pepper. Add pork roast to reserved bacon fat. Cook over medium heat, turning several times, until browned (7 to 9 minutes).

Add sauerkraut mixture; cover. Bake for 1 1/2 to 2 hours or until pork roast reaches an internal temperature of 160°F.

Recipe Tip:

This recipe can be prepared in a slow cooker. Place browned pork roast in slow cooker; add sauerkraut mixture. Cook on Low heat setting for 8 to 10 hours or High heat setting for 4 to 5 hours
