Buttery Baked Caramel Corn

  • # 1 cup butter
  • # 2 cups firmly packed brown sugar
  • # 1/2 cup dark corn syrup
  • # 1 teaspoon salt
  • # 1/2 teaspoon baking soda
  • # 1 1/4 teaspoon vanilla extract
  • # 6 quarts air popped corn

Step 1

Preheat oven to 250 degrees. In a heavy saucepan, over medium heat, combine butter, brown sugar, corn syrup and salt. Stirring constantly, bring to a boil, then boil without stirring for five minutes. Remove from heat, stir in soda and vanilla, then mix well. Place popped corn in a very large bowl which has been sprayed with cooking spray. Pour caramel mixture over popped corn and mix well. Spray a large roaster pan with cooking spray and pour in caramel corn. Bake for 45 minutes, stirring every 15 minutes. Remove from oven and pour on counter, or a board, to cool. Break apart with fingers and store in an airtight container
