Honey Glazed Carrots

Ingredients
- 6 cups water
- 3 lb. package peeled baby carrots
- 2 tablespoons butter
- 3 to 4 tablespoons honey
- 1 teaspoon finely shredded lemon peel
- 1/2 teaspoon crushed red pepper
- 1/2 teaspoon salt

Preparation
Step 1
In large skillet, bring water to boiling. Add carrots and return to boiling; reduce heat. Simmer, covered, for 8 to 10 minutes or until carrots are just tender. Drain carrots; pat dry with paper towels.
To glaze carrots, in same skillet, combine butter, honey, 1 teaspoon lemon peel, 1/2 teaspoon red pepper, and salt. Cook and stir constantly over medium heat until butter is melted and mixture bubbles. Carefully add carrots, toss gently for 2 to 3 minutes or until carrots are thoroughly coated with glaze and heated through completely.
Place in serving dish and drizzle with remaining glaze.
