Fig & Roasted Walnut Salad with Honey Balsamic Vinaigrette

  • 1/4 cup walnut pieces
  • 12 dried figs, cut into eighths
  • 8 cups spinach
  • 1/2 cup sliced red onion
  • 1/4 cup crumbled feta cheese
  • 3 Tbsp olive oil
  • 2 Tbsp balsamic vinegar
  • 1 Tbsp honey
  • 1 1/2 tsp Dijon mustard
  • 1 clove garlic, crushed

Step 1

Preheat oven to 350. Place walnut pieces on baking sheet and bake 6-8 minutes or until nuts are golden brown and fragrant. Remove from heat and cool.

In a large salad bowl, toss figs, spinach, onion, feta cheese and roasted walnuts.

In a small bowl, whisk together olive oil, vinegar, honey, mustard and garlic.

Drizzle salad with dressing and serve immediately.
