Roast Turkey in a Four-Pepper Rub

Ingredients
- 16-20 lb. All-Natural Turkey
- 1/2 cup olive oil
- 3/4 - 1 cup ground Olde Thompson All-Natural Gourmet Four Pepper Blend
- 4 tsp. Olde Thompson All-Natural Himalayan Pink Salt

Preparation
Step 1
1.) Preheat oven to 325°.
2.) Remove giblets and wash turkey thoroughly with cold water. Pat dry with paper towels.
3.) Place turkey on rack in roasting pan. Sprinkle 1 tsp. each of salt and pepper into cavity and lace shut, tying legs together.
4.) Rub skin thoroughly with olive oil to coat. Sprinkle on crushed peppercorns, creating a thick coating. Using hands, pat additional pepper onto any gaps in crust, sealing completely.
5.) Carefully place pan in oven and roast undisturbed for 3 1/2 to 4 hours or until thickest part of the breast reaches 165°.
6.) Remove from oven. Cover with foil and let rest for 10 minutes. Sprinkle with remaining salt just before serving.
