APPLE BUNDT CAKE

Ingredients
- CAKE:
- 2 cups sugar
- 1 cup oil
- 3 eggs
- 2 cups flour
- dash of salt
- 1 teaspoon soda
- 1/2 teaspoon nutmeg
- 2 teaspoons cinnamon
- 2 teaspoons vanilla
- 3 cups grated apples
- 1 cup chopped walnuts
- or pecans, lightly toasted
- GLAZE:
- 4 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla
- 3-4 tablespoons heavy cream

Preparation
Step 1
CAKE:
Preheat oven to 325 degrees. Spray Bundt pan with Baker's Joy or grease and flour pan. Sift together flour, salt, soda, nutmeg, and cinnamon; set aside. Grate apples; set aside. In large bowl, beat sugar, oil, eggs, and vanilla. Add dry ingredients and beat until well blended. Stir in apples and nuts. Spoon batter into prepared pan. Bake 1 hour and 30 minutes or until inserted toothpick comes out clean. Cool cake in pan for 1 hour. Turn out on plate & cool completely. Glaze with Cream Cheese Glaze. Refrigerate.
GLAZE:
Beat cream cheese and gradually add powdered sugar. Stir in vanilla. Add 3 tablespoons of cream. If needed, add more cream, 1 teaspoon at a time to get desired consistency for drizzling.
Note: May substitute 2 teaspoons of apple pie spice for nutmeg and cinnamon.
