Artichoke & Goat Cheese Bruschetta

Ingredients

  • 2 Tbsp. Extra-Virgin Olive Oil, plus more for brushing
  • 2 Garlic Cloves, thinly sliced
  • 1 Bay Leaf
  • 5 Thyme Sprigs
  • 10 oz. Artichoke Hearts, frozen or otherwise, thawed & squeezed dry
  • 1/2 tsp. Finely Grated Lemon Zest
  • 1/2 C. Mild Fresh Goat Cheese, softened
  • 2 tsp. Fresh Lemon Juice
  • Salt & Freshly Ground Black Pepper
  • Baguette, cut into 16 thin slices

Preparation

Step 1

Preheat the broiler. In a med. skillet, heat 2 Tbsp. of olive oil till shimmering. Add the garlic, bay leaf, thyme sprigs & cook over med. heat till fragrant, approx. 2 min. Add the artichokes & lemon zest & cook, stirring, till lightly browned, approx. 5 min. Discard the thyme sprigs & bay leaf. Transfer mixture to food processor. Add goat cheese & lemon juice, pulse till pureed. Brush baguette slices with olive oil & broil for 1 min, turning once. Spread artichoke mixture on slices, then return to broiler for another min. Serve hot.
