Ingredients

  • 6 tablespoon unsalted butter
  • 4 cup yellow onions; thinly sliced
  • 42 ounces beef broth
  • 2 tablespoon sherry
  • 1 teaspoon dried thyme
  • Salt
  • pepper
  • french bread; toasted
  • 2 cup cheddar cheese; shredded
  • 1/4 cup parmesan cheese; shredded

Preparation

Step 1

Melt the butter in a large pot over medium heat. Add the onions and stir
until they are translucent. Do not brown.

Add the beef broth, sherry and thyme. Season to taste with salt and pepper.
Reduce heat and simmer for about 30 minutes.

Heat the broiler.

Ladle the soup into broiler-safe bowls and place one slice of toasted
French bread on top of each serving. Pile on the shredded cheddar and
finish with one tablespoon Parmesan cheese. Place bowls under broiler and
heat until cheese melts and begins to bubble and slightly brown.
