Chicken/Turkey Pot Pie

Ingredients

  • 4 skinless chicken breasts (bone in)/turkey breast
  • 14 1/2 oz can chicken broth
  • 2 small largely chopped russet potatoes
  • 1 medium largely chopped yellow onion
  • 3 largely chopped celery stalks
  • 2 tbsp coconut oil
  • 2 tbsp all purpose flour
  • 2 cups frozen mixed vegetables
  • salt and pepper to taste
  • 1/4 tsp garlic powder
  • pie crust

Preparation

Step 1

Preheat oven to 350º. Wash and cut potatoes into bite size pieces and boil until almost fork tender. Drain and set aside.

Wash ad chop celery and onion into bite-size pieces. In a skillet, over medium heat, saute celery and onion with the oil for 5-8 minutes. Add the vegetables and cook another 5 minutes. Add flour and cook about 30 seconds. Add chicken broth and bring to a boil. After it has become thick, add potatoes.

Remove chicken from pot, toss bones (if cooking fro scratch). Cut into bite-size pieces and add to vegetable mixture. Add salt and pepper to taste.
