Orzo salad

I use wheat or grain pasta for this recipe. You can substitute the orzo for another pasta if you like.

Ingredients
- 2 1/2 cups uncooked whole wheat orzo (about 1 pound)
- 1 15-oz can cannellini beans
- 3 med tomatoes, finely chopped
- 1 English cucumber, finely chopped
- 2 cups (8 oz) crumbled feta cheese
- 1 1/4 cups Greek olives, pitted and chopped
- 1 med green bell pepper, finely chopped
- 1 med yellow or red bell pepper, finely chopped
- 1 cup fresh mint leaves, finely chopped
- 1/2 med red onion, finely chopped
- 1/4 cup lemon juice
- 2 Tbsp olive oil
- 1 Tbsp grated lemon peel
- 3 garlic cloves, minced
- 1/2 tsp pepper

Preparation
Step 1
1. Cook orzo according to package directions. Drain orzo and rinse with cold water. Set aside.
2. In a separate bowl, combine remaining ingredients. Stir in the orzo and refrigerate until serving.
