I use wheat or grain pasta for this recipe. You can substitute the orzo for another pasta if you like.

Ingredients

  • 2 1/2 cups uncooked whole wheat orzo (about 1 pound)
  • 1 15-oz can cannellini beans
  • 3 med tomatoes, finely chopped
  • 1 English cucumber, finely chopped
  • 2 cups (8 oz) crumbled feta cheese
  • 1 1/4 cups Greek olives, pitted and chopped
  • 1 med green bell pepper, finely chopped
  • 1 med yellow or red bell pepper, finely chopped
  • 1 cup fresh mint leaves, finely chopped
  • 1/2 med red onion, finely chopped
  • 1/4 cup lemon juice
  • 2 Tbsp olive oil
  • 1 Tbsp grated lemon peel
  • 3 garlic cloves, minced
  • 1/2 tsp pepper

Preparation

Step 1

1. Cook orzo according to package directions. Drain orzo and rinse with cold water. Set aside.

2. In a separate bowl, combine remaining ingredients. Stir in the orzo and refrigerate until serving.
