Ingredients
- 1 1/2 lbs. Unpeeled, medium-size fresh shrimp
- 1 large onion, finely chopped
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped red bell pepper
- 1/2 cup chopped celery
- 1/4 cup chopped green onions
- 2 garlic cloves, minced
- 3 tablespoons vegetable oil
- 1 (16 oz) can stewed tomatoes
- 1 (8 oz) can tomato sauce
- 2 bay leaves
- 1 teaspoon Creole seasoning
- 1/4 teaspoon ground red pepper (optional)
- hot cooked rice

Preparation
Step 1
Peel shrimp and devein, if desired; set aside.
Saute onion and next 5 ingredients in oil in a large skillet 3 minutes or until tender. Stir in tomatoes and next 4 ingredients; bring to a boil. Reduce heat; cook, stirring occasionally, 20 minutes. Add shrimp; cook 5 minutes or until shrimp turn pink. Remove and discard bay leaves; serve over rice.
