Creamy Potato Salad

Ingredients

  • 6 medium baking potatoes (2 lbs)
  • 1 1/2 cups mayonnaise
  • 1/4 cup Italian dressing
  • 1 tbs mustard
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 cup chopped celery
  • 1/2 cup chopped onion
  • 4 hard boiled eggs

Step 1

Peel and cube potatoes place in pot with enough water to cover potatoes and boil until fork tender ( about 20 minutes) do not over cook. Drain potatoes in put in a large mixing bowl while potatoes are still hot toss with the 1/4 cup Italian dressing and chill until cold. Combine the mayonnaise, salt, pepper, and mustard and chill as well. When potatoes are completely chilled add the mayonnaise, celery and onions and toss, then add your chopped hard boiled eggs and toss as well, chill and serve.
