Ingredients
- 1 4-6 oz. lean, boneless skinless chicken breast
- 2 slices of fresh pineapple
- 1/4 cup fresh pineapple juice
- 1 lime, juiced
- 1 tsp. agave syrup
- 1 clove garlic, finely minced
- 1/2 tsp. black pepper & a pinch of salt
- Pineapple Salsa
- 2 cups diced pineapple
- 1/2 red bell pepper, diced
- 1/2 orange bell pepper, diced
- 1/2 jalapeno, finely chopped
- 1/4 cup chives, diced
- Juice of 1 lime

Step 1
In a small bowl, combine the pineapple juice, lime juice, agave syrup, minced garlic, sea salt and pepper. Stir to mix ingredients. Brush liquid over chicken breast to completely cover. Cover chicken and place in fridge about 10 min to let it absorb the flavors from the marinade. Save excess marinade. Get the grill going to med. heat. Place the chicken breast on the grill. Cook for about 5 min or until the underside is lightly browned. After about 3 minutes, place the pineapple slices on the grill. Cook for about 1 min. on each side. Flip the chicken breast, drizzle the browned side with the leftover marinade and top with pineapple slices from the grill. Let the chicken cook for about 5 min more or until cooked completely through. Remove from grill and top with pineapple salsa.
For the salsa:
In a small mixing bowl combine all ingredients. Toss together until well mixed. If you would like to make your salsa spicier, add a pinch of cayenne pepper.
