Ingredients
- 3 T paprika
- 1/2 tsp cayenne pepper
- 1/2 tsp celery salt
- 1/2 tsp dry mustard
- 1/2 tsp ground cumin
- 1 T plus 2 tsp packed brown sugar
- 2 racks St. Louis style pork ribs (2 to 2 1/2 lbs each)
- 1 c boiling water
- 3/4 c cider vinegar
- 3 T ketchup
- 1/2 tsp crushed red pepper

Preparation
Step 1
• Prepare dry rub combining first 5 ingredients plus 2 tsp brown sugar, 1 ½ tsp salt and 2 tsp black pepper.
• In large roasting pan, place ribs and rub with dry rub. Cover and refrigerate at least 1 hour or up to 1 day
• Preheat oven to 350. Uncover ribs and add boiling water to pan. Cover pan tightly with foil and bake 1 hour 30 min. until tender. Uncover ribs – heat grill
• Prepare sauce mixing last 3 ingredients and remaining brown sugar
• Grill ribs, bone side down 5 minutes brushing with sauce – turn and repeat
