Cheesy Broiled Flounder

In working towards being a bit healthier I used light butter, 2 T. light mayo and did not add the salt. Worked out to about 163 calories per serving for 6 servings.

Ingredients

  • 6 flounder filets (approx. 4 oz. each)
  • 2 T. lemon juice
  • 1/2 c. grated Parmesan
  • 1/4 c. butter, softened
  • 3 T. mayo
  • 3 finely chopped green onions
  • 1/4 t. salt (optional)
  • 1/8 t. hot pepper sauce (optional)

Step 1

Preheat broiler. Place fish in a shallow, greased baking pan. Sprinkle with lemon juice. In a small bowl combine parmesan cheese, butter, mayonnaise, green onions, salt & hot pepper sauce. Set aside. Broil flounder 4-6 minutes or until fish flakes easily with a fork. Remove from oven, spread cheese mixture on top. Broil an additional minute or until cheese is lightly browned & bubbly. Serve warm.
