Ingredients

  • 1 1/2 Tbsp Ginger Root (peeled and minced)
  • 1 Tbsp Garlic (minced)
  • 1 Tbsp Scallion (chopped)
  • 6 Tbsp Creamy Peanut Butter
  • 2 Tbsp Dark Soy Sauce
  • 1/4 cup Red Wine Vinegar
  • 1 Tbsp Chinese Chili Paste
  • 1 tsp Sugar
  • 1 Tbsp Sesame Oil
  • 2 Tbsp Corn Oil
  • 1 Tbsp Dry Sherry
  • 1 tsp Dry Mustard
  • 1/2 cup Chicken Stock
  • 1 pound Pasta (cooked)
  • 1 cup Carrots (julienned)
  • 1 cup Scallions (julienned)
  • 1/4 pound Ham (julienned)
  • 1 cup Bean Sprouts
  • 1 cup Cucumber (julienned)
  • 1 cup Red Pepper (julienned)

Preparation

Step 1

To make Peanut Sauce, combine Ginger, Garlic, 1 Tbsp of Scallion, Peanut Butter, Soy Sauce, Vinegar, Chili Paste, Sugar, Sesame and Corn Oil, Sherry, Dry Mustard and Chicken Stock. Blend thoroughly. Toss Peanut Sauce with Pasta and remaining ingredients. Adjust seasonings and refrigerate.
