Stawberry Blintz

- Filling:
- 8 oz. cream cheese
- 15 oz. ricotta cheese
- 2 egg yolks
- 1 tbls sugar
- 1/2 tsp. almond extract
- Blintz:
- 1/2 butter, softened
- 1/3 cup sugar
- 5 eggs, plus the whites from the filling
- 1 cup all-purpose flour
- 2 tsp. baking powder
- 1 1/2 cup vanilla yogurt
- 1/2 cup orange juice
- 1/2 tsp. vanilla

Step 1
Preheat oven to 350 degrees. To make the filling, beat cream cheese until smooth, add ricotta, egg yolks, sugar and almond extract. Mix thoroughly and set aside.
To prepare the blintz, in a small bowl, combine flour with baking powder and set aside. In a second bowl, blend yogurt, orange juice, and vanilla then set aside. In another bowl, cream butter and sugar, add the eggs and egg whites and beat until well mixed. Add the flour mix and yogurt mixture alternately to the egg mixture. Pour half of batter into a 9x13 inch greased glass baking dish. Gently add filling, spreading over batter base. Top with remaining batter gently covering filling to sides of dish. Bake for 40-45 minutes until golden brown.
