red bell pepper puree

  • 3 red bell peppers(capsicums)
  • 1 clove garlic
  • 1/4 cup (2 fl oz/60ml) extra-virgin olive oil
  • salt
  • 2 tablespoons chopped flat-leaf(Italian) parsley

Step 1

preheat oven to 350.

Arrange the bell peppers on a baking sheet. Place in the oven and cook, turning occasionally, until completely soft and blistered evenly, about 30 minutes. Remove the peppers from the oven and when cool enough to handle, peel them. Stem the peppers and remove the seeds and ribs.

Place the peppers in a food processor fitted with the metal blade or in a blender. Add the garlic, olive oil and salt to taste. Process until smooth.

meanwhile, cook you choice of pasta until al dente. Drain and transfer to a warmed serving dish. Immediately pour the puree over the top and toss well. Sprinkle with the parsley and serve at once.
