  • 1 carrot, finely chopped
  • 1 stalk celery, finely chopped
  • 1/4 cup onion, finely chopped
  • Salt and freshly ground black pepper
  • 1 cup French green lentils, rinsed
  • 1 cup chicken stock


Servings 4


Step 1

In a medium saucepan, combine the carrot, celery, and onion. Cook until vegetables are soft. Add the lentils and chicken stock. Bring to a boil. Reduce the heat to medium-low and simmer until just tender yet still firm, 15 to 20 minutes.
