Ingredients

  • 1 cup unsalted butter, room temp
  • 1 cup sugar
  • 1 tsp vanilla
  • 1/2 cup chopped, toasted pecans
  • 1/2 cup finely crushed plain potato chips
  • 2 cups all-purpose flour, sifted

Preparation

Step 1

Heat oven to 350.
In large bowl, cream together the butter, 1/2 cup of the sugar, and vanilla. Add the pecans and chips and stir well. Add flour and stir to combine.
Place remaining 1/2 cup sugar in a shallow bowl.
Form mixture into small balls, about 1 tbsp each and place on ungreased baking sheet.
Dip the bottom of a heavy, flat-bottomed glass in sugar and flatted the cookies, dipping in sugar before doing each cookie.
Bake 14 to 16 minutes.
