Key Lime Pie with a Pretzel Crust

Ingredients
- Crust:
- 1 cup plus 2 tbsp very finely ground salted pretzel crumbs
- 3 tbsp sugar
- 7 tbsp butter, melted
- Filling:
- 4 large egg yolks
- 2 (14 oz) cans sweetened condensed milk
- ¾ cup key lime juice
- 3 tbsp lime juice
- Zest of lime

Preparation
Step 1
• Preheat the oven to 350 degrees and lightly grease a 9” pie pan with non-stick spray
• Add the sugar and melted butter to the crushed pretzels and combine
• Press the mixture into the bottom and up the sides of the prepared pan
• Bake for 8-10 min, the crust won’t change color, but it will firm up a bit
• Whisk together the egg yolks and condensed milk
• Add the lime juice and zest
• The mixture will thicken almost immediately
• Pour into the crust and smooth with a spatula
• Bake the pie for 28-32 min, until the filling is set, with a small spot in the middle left to soft cook
• Cool for several hours (or overnight)
• Garnish with zest, whipped cream and/or crushed pretzels
