Italian Skillet Chicken

Heat the oil in a large nonstick skillet over medium-high heat
- 2 tsp oil
- 2 med onions chopped
- 1 med carrot chopped
- 1 rib celery sliced
- 3/4 lbs chicken breats diced
- 14 1/2 oz can crushed tomatoes
- 1 teas. basil
- 1/2 tsp salt
- 1/4 tsp pepper
Egg, Canadian Bacon, Avocado and Tomato Sandwiches

Coat a large nonstick skillet with cooking spray; place over medium-high heat
- 2 sprays pam
- 4 weight watchers english muffin, split and toasted
- 2 1/2 oz uncooked Canadian style bacon 4 slices
- 3 large eggs
- 4 egg whites
- 2 tbsp uncooked scallions sliced
- 1/2 tbsp salt
- 1/4 tsp pepper
- 1/2 medium avocado, cut into 8 slices
- 1 med plum tomato cut into 8 slices.
Cheesy Spaghetti Pie

Mix the cooled spaghetti, grated cheeses and eggs together in a large bowl
- 1 pound cooked spaghetti, cooled
- 1/2 cup grated Parmesan
- 1/2 cup grated pecorino
- 1/2 cup grated Swiss
- 4 eggs
- Salt and freshly ground black pepper
- 2 tablespoons olive oil
- 4 slices American cheese

- 1/4 cup flaxseed meal ( I use Bob's Red Mill Golden Flax Seed Meal)
- 1/2 teaspoon baking powder
- 1 - 2 packets Splenda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1 egg
- 1 tablespoon unsalted butter, melted
Vegetarian Mushroom Meatballs

In a large skillet, saute the onion in olive oil on medium-low heat for about 7 minutes
- 3 tbsp olive oil
- 1 medium onion (chopped)
- 20 oz mushrooms, finely chopped
- 1 cup quick cook oats
- 1 cup breadcrumbs
- 1/2 cup chopped parsley
- 4 garlic cloves (minced)
- 2 eggs
- 1/2 tsp dried oregano
- 1/2 tsp dried thyme
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 24oz jar Marinara sauce
- parsley to garnish
- 1/3 cup grated Parmesan cheese (optional)
Chili Relleno Squares Recipe

Layer cheeses and chilies in a greased 8-in
- 3 cups (12 ounces) shredded Monterey Jack cheese
- 1-1/2 cups (6 ounces) shredded cheddar cheese
- 2 cans (4 ounces each) chopped green chilies, drained
- 2 eggs
- 2 tablespoons milk
- 1 tablespoon all-purpose flour

Instructions Heat 2 tbsp oil in a large pot over high heat
- 2 - 3 tbsp olive oil , separated
- 30 g / 2 tbsp butter
- 750 g / 1.5 lb mushrooms , sliced 3 - 5 mm / 1/8 - 1/5" thick (Note 1)
- 2 garlic cloves , minced
- 1 small onion , finely diced
- 1 1/2 cups long grain rice (Note 2)
- 2 1/4 cups / 565 ml vegetable stock / broth (or chicken) (Note 3)
- 1 1/2 - 2 cups sliced green onion / scallions
