Halibut with Lemon-Butter and Crispy Shallots

- Lemon Butter:
- 1 tablespoon fresh lemon juice
- 1/4 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- Zest of 1 large lemon
- 1/2 stick unsalted butter, at room temperature
- Halibut and Crispy Shallots:
- 1/4 cup extra-virgin olive oil
- 2 tablespoons fresh lemon juice
- 1/4 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 2 large cloves garlic, smashed
- 4 halibut fillets (each 4 to 5 ounces)
- 1/2 cup grapeseed oil
- 2 large shallots, cut into rounds, separated into rings
- Lemon wedges, for garnish
Pepperoni Pizza Spaghetti Casserole

Preheat oven to 400º. Toss florets with olive oil, bread crumbs and cheese
- 1 head cauliflower, cut into 1/2 -1 inch florets
- 1/2 cup fresh bread crumbs, (I USED GLUTEN FREE BY ALEIA'S)
- 1/4 cup freshly grated Parmesan (I CONFESS, I DON'T MEASURE AND I'M SURE I USE MORE!!!!)
- 1/4 cup olive oil (AGAIN, I DON'T MEASURE BUT MAKE SURE THE FLORETS ARE WELL COATED!!!!!!
- Salt and pepper to taste

- 6 tablespoons butter
- 1 medium onion, chopped
- 3 tablespoons flour
- 2 teaspoons salt
- 1 teaspoon pepper
- 6 cups chicken broth
- 1 1/2 pounds mushrooms, sliced
- 3/4 cup sliced celery
- 3/4 cup chopped carrots
- 2 cups quartered baby red potatoes
- 1 cup chopped yellow squash
- 1 1/2 cups frozen corn kernels, thawed
- 2 teaspoons thyme
- 2 cups light cream
- 3/4 cup grated Parmesan, plus more for garnish if desired

(Slow Cooker) Buffalo Chicken Lasagna Recipe

In a large bowl, combine cooked and chopped chicken breast, pasta sauce, and 1 cup of buffalo wing sauce
- uncooked traditional lasagna noodles
- 4 cooked chicken breast halves
- 1 jar of prepared pasta sauce (26 oz)
- 1 cup buffalo wing sauce (we used Frank's sauce- it is so good!)
- 3 green bell peppers, chopped (you could also use red, yellow, or orange peppers if you want)
- tub of ricotta cheese (15 oz)
- 2 cups shredded cheese (mozzarella and cheddar blend)
- 1/2 cup bleu cheese crumbles
- 1/4 cup of water (add at very end)
