Turkey and Black Bean Enchiladas

- For the Enchilada Sauce:
- 1 lb extra lean ground turkey
- 15.5 can black beans, drained
- 4.5 oz can chopped green chiles
- 14.5 oz can diced tomatoes
- 2 cloves garlic
- 1/4 cup chopped onion
- 1/4 cup chopped cilantro
- 1-2 tsp cumin
- 1/8 tsp chili powder
- salt
- 8 (6-inch) low carb whole wheat flour tortillas (La Tortilla Factory)
- 1 cup reduced fat shredded Mexican cheese (I used Weight Watchers)
- nonstick cooking spray
- 2 garlic cloves, minced
- 1-2 tbsp chipotle chiles in adobo sauce
- 1-1/2 cups tomato sauce
- 1/2 tsp chipotle chili powder
- 1/2 tsp ground cumin
- 3/4 cup fat free chicken broth
- kosher salt and fresh pepper to taste

- Ingredients
- • 1/4 c extra virgin olive oil (MUFA), divided
- • 1 Tbsp + 2 tsp red wine vinegar
- • 1/2 tsp dried oregano
- • 1/4 tsp freshly ground black pepper
- • 1/8 tsp salt
- • 2 c skinless shredded rotisserie chicken breast (8 oz) or leftover roasted chicken breast
- • 2 med tomatoes (8 oz), cut into 1/2" pieces

In a deep, coverable pan, melt one pat of butter and about a tbsp of olive oil

- 1/4 of on an onion chopped
- 1 cup of chicken Broth
- 1 cup of white wine
- 3 pats of butter

- 1 Bay leaf
- Pinch of Saffron (optional)

- 5-10 Mussels
- 5-10 Clams
- 5-10 Shrimp
- 1 tsp of flour
- 1 cup favorite Rice
- Three sprigs of parsley finely chopped

Directions Preheat the oven to 400 degrees F
- Ingredients
- 1 * 1 cup pastina pasta (or any small pasta)
- 2 * 2 tablespoons olive oil
- 1/2 * 1/2 cup cubed chicken breast (1-inch cubes)
- 1/2 * 1/2 cup diced onion (about 1/2 a small onion)
- 1 * 1 clove garlic, minced
- 1 * 1 (14.5-ounce) can diced tomatoes with juice
- 1 * 1 cup shredded mozzarella
- 1/4 * 1/4 cup chopped fresh flat-leaf parsley
- 1/4 * 1/4 teaspoon kosher salt
- 1/4 * 1/4 teaspoon freshly ground black pepper
- 1/4 * 1/4 cup bread crumbs
- 1/4 * 1/4 cup grated Parmesan
