- Crust:
- 1 1/4 cups crumbs, any combination of gingersnap, graham cracker, walnuts/pecan or coconut
- 3 1/2 Tbsp melted butter
- Filling:
- 2 - 8 oz pkg cream cheese
- 3 Tbsp raisins or dried currants
- 1/2 cup very finely grated carrots (see **Carrots, below)
- 1/4 cup crushed pineapple, well drained
- 3/4 cup brown or white sugar
- 1 tsp vanilla
- 1 1/4 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp cardamom (optional)
- 2 eggs
- 1 egg yolk
- 3 Tbsp chopped walnuts or pecans
- 3 Tbsp coconut
- Cream Cheese Frosting:
- 4 oz cream cheese
- 2 Tbsp butter, room temperature
- 1 1/2 cups powdered sugar (icing sugar)
- 1 tsp lemon juice
- 1/2 tsp vanilla
- 1/4 cup finely chopped pecans or walnuts (optional)

- 4 strips bacon, cut into bite-sized pieces
- 4 ears corn, cleaned
- 1/2 teaspoon salt
- 1/2 teaspoon pepper

- 1/4 1/4 1/4 cup honey
- 1/4 1/4 1/4 cup orange juice
- 4 4 4 cloves minced garlic

- 1/4 1/4 1/4 teaspoon red pepper flakes
Weight Watcher Chow Mein

- 1/4 lb. pork cut into 1/4"x1-1/2" pieces
- 1 Tbl. sugar
- 2 onions, sliced
- 3 C celery, sliced at an angle
- 1 bell pepper, diced
- 1 can water chestnuts with water
- 2 C bean sprouts

- soy sauce
Brown Sugar and Bourbon Pork Tenderloin

To prepare pork, combine first 7 ingredients
- 1/4 cup packed dark brown sugar
- 1/4 cup minced green onions
- 1/4 cup bourbon
- 1/4 cup low-sodium soy sauce
- 1/4 cup Dijon mustard
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon Worcestershire sauce
- 1 pork tenderloin (or flank steak)
- 1/2 teaspoon cornstarch
Spaghetti Sauce

1. Heat olive oil over medium high heat
- 3 tablespoons olive oil
- 2 cups onion, chopped and divided
- 1 red pepper, coarsely chopped
- 2 pounds hamburger (at least 90% lean)
- 5 cloves garlic, finely chopped
- 1 12 oz. can tomato paste
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 3 teaspoons dried oregano
- 3 teaspoons dried basil
- 1 1/2 teaspoons dried thyme
- 2 14-oz. can Italian-style diced tomatoes
- 2 28-oz. can crushed tomatoes
- 1 carton fresh mushrooms (optional)
- 1 1/2 cups beef stock or beef broth
- 2 tablespoons brown sugar
- 2 bay leaves
- 2 tablespoons balsamic vinegar (I used 1 Tbsp.)
Simple Savory Pork Roast

- 1 1/2 tablespoons fresh rosemary
- 2 teaspoons garlic salt
- 1/2 teaspoon dried thyme
- 1/4 teaspoon freshly ground black pepper

In a large pot of salted boiling water, cook pasta until al dente, rinse under cold water and drain well
- 1 (16 ounce) box of Rotini pasta (or any shape you prefer)
- 3 cups cherry tomatoes, halved
- 1 large green bell pepper, diced
- 1 can of black olives, drained
- 1/2 pound of provolone cheese, cut into cubes
- 1/4 Pound of Mozzarella cheese , cut into cubes
- 1/2 small Onion, diced
- 1/2 Pound of sliced pizza sized pepperoni OR Salami, cut into halves
- 1/2 teaspoon black pepper
- 1 (8 ounce) bottle of Italian dressing (I used Wishbone)
- 1 Tablespoon of red wine vinegar
