Cheesy Ranch Potatoes

- Optional Ingredients:
- 1 2lb bag FROZEN hash browns, country style
- 1 8oz bag shredded cheddar cheese
- 1 8oz container sour cream
- 1 8oz can cream of chicken soup
- 1/4 c melted margarine

Greek Chicken Breast Saute

Dredge the chicken in seasoned flour
- 4 whole chicken breasts, skinned and boneless
- 1 c flour, seasoned with salt and black pepper
- 1/4 c olive oil
- 1 1/2 c dry white wine
- 1 c fresh tomatoes, peeled, seeded, and chopped
- 1/2 c capers
- 1/2 c black olives, pitted and sliced
- 1/2 c green olives, pitted and sliced
- 1 T fresh rosemary
Smothered Chicken and Green Bean Skillet

Quick and easy to fix after work
- HINT:
- 4 boneless skinless chicken breast halves
- 2 c frozen green beans
- 1 can (10 3/4oz) condensed cream of mushroom soup
- 1/4 t dried thyme leaves
- 1 c shredded cheddar cheese
- May substitute golden mushroom soup for cream of mushroom soup
Honey Cookies

- 1/2 c sugar
- 1/2 c orange juice
- 2 c vegetable oil
- 5 c flour
- 3 t baking powder
- 2 t cinnamon
- 2 c chopped pecans
Thanksgiving Turkey Dressing

Dressing for turkey most like Mother's
- 3/4 c margarine or butter
- 1 medium onion, chopped (1 cup)
- 1 1/2 c chopped celery
- 1 T dried rubbed sage
- 12 c dried bread cubes (1 loaf of white bread)
- 1 1/2 t salt
- 1/4 t pepper
- 1 t dried thyme
- 1/2 t dried marjoram
- 1/2 t ground nutmeg
- 1/2 to 1 1/4 c chicken broth
Mediterranean Grilled Chicken Breast

In a large bowl, place the lemon juice, olive oil, garlic, basil and salt
- 1 c lemon juice, freshly squeezed
- 1/2 c olive oil
- 4 cloves garlic, finely minced
- 1/4 c fresh basil leaves, minced
- 1/2 t salt
- 6 whole chicken breast, boneless and skinless
Mediterranean Style Chicken

Heat large non-stick skillet on medium-high heat
- 4 boneless skinless chicken breast halves
- 1 can (14 1/2oz) Italian syle diced tomatoes, undrained.
- 1/2 cup black olives, chopped
- 1 T lemon zest
- 1 c shredded Italian 5 cheese blend
Steak Fingers with Honey Mustard Sauce

Dip steak into flour, then into egg bath, then into flour again
- Coating:
- 1 1/2 lb cube steak, cut into strips
- 2 c flour
- 1 T seasoning salt
- 1 t paprika
- 1 t salt
- Egg Bath:
- 2 eggs
- 1/2 c evaporated milk (or any combo of milk and 1/2 and 1/2 to equal 1/2 cup)
- Honey Mustard Dipping Sauce:
- 1 c Dijon mustard
- 1/2 c honey
- 1/2 t whole dillweed

- 1 Envelope Lipton Recipe Onion Soup Mix
- 1 1/2 to 2 lbs Ground Beef
- 1 1/2 cups Bread Crumbs
- 2 Eggs
- 1 can Rotel Tomatoes with Green Chiles
