- 1 16 oz bag frozen broccoli pieces
- 1 qt half and half
- 1 stick butter

Grilled Orange and Bourbon Salmon

Easy tasty salmon dish
- 1/4 c bourbon
- 1/4 c orange juice
- 1/4 c soy sauce
- 1/4 c packed brown sugar
- 1/4 c chopped green onions
- 3 T chopped fresh chives
- 2 T lemon juice
- 2 garlic cloves, chopped
- 4 6-oz salmon fillets (about 1 inch thick)

Spicy Shrimp Linguine

Heat the oil in a very large nonstick skillet, then add the onions and garlic
- 1 T olive oil
- 1 onions, chopped
- 3 garlic cloves, chopped
- 14 oz can diced tomatoes
- 1/4 c dry red wine
- 2 T chopped fresh oregano, or 2 t dried
- 3/4 lb linguine
- 1/4 c chopped parsley
- 1/2 t crushed red pepper
- 1/2 t salt
- 1/4 t sugar
- 1/4 t coarsely ground black pepper
- 1 1b large shrimp, peeled and deveined
- HINT: Can substitute canned diced tomatoes with either oregano and basil or with "Italian seasoning"
Poppy Seed Bread

- 2 1/4 c flour
- 1 1/2 c sugar
- 3/4 c poppy seeds
- 1 T baking powder
- 3 eggs
- 1 1/4 c milk
- 3/4 c vegetable oil
- 1 t vanilla
Baked Spaghetti

- 1 16oz pkg spaghetti
- 1 1b ground beef
- 1 medium onion, chopped
- 1 26oz jar meatless spaghetti sauce
- 1/2 t seasoned salt
- 2 eggs
- 1/3 c grated parmesan cheese
- 5 T butter, melted
- 2 c 4% cottage cheese
- 4 c shredded part-skim mozzarella cheese

- 12 chocolate safers
- 11 oz cream cheese
- 3/4 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1/2 tsp almond extract
Rosemary Dijon Pork Chops & Oven Potatoes Dinner

Heat oven to 375 degrees. Toss potatoes with dressing in mocrowaveable bowl
- 1 lb potatoes, cut into 1-inch cubes
- 1/4 c Italian Dressing
- 4 bone-in pork chops, 1/2 inch thick
- 4 t Dijon mustard
- 1/2 c shake and bake pork seasoned coating mix (or flour and seasonings appropriate for pork)
- 1/4 t dried rosemary leaves, crushed
- 2 c hot cooked baby carrots
All in One Pork Chop Bake

Preheat oven to 400 degrees
- 4 bone-in pork chops
- 1 pkg shake and bake pork seasoned coating mix
- 1 lb potatoes cut into thin wedges
- 2 T Italian Dressing
- 1/2 BBQ sauce
- 1 c shredded part-skim mozzarella cheese
Chili Cheese Chicken

Combine olive oil, spices, cilantro, salt and black pepper in a zip-lock plastic bag and mix well
- HINT:
- 2 T EVOO
- 1/2 t chili powder
- 1/2 t ground cumin
- 1/4 t cayenne pepper
- 1/2 t garlic powder
- 1/2 t chopped cilantro
- 1/4 t salt
- 1/4 t black pepper
- 4 skinless boneless chicken breast halves, rinsed and patted dry
- 2 T finely chopped red onion
- 1 medium tomato, seeded and diced
- 1/2 medium green bell pepper, cut into strips
- 1 c shredded Cheddar cheese
- May substitute 1 can "mexican style" diced tomatoes for tomato
- May substitute a 4oz can ortega green chilis for bell pepper
Chicken Breasts in Caper-Madiera Sauce

Cover breasts with wax paper and flatten with mallet until 1/4" thick
- 2 chicken breasts, skinned and boned
- 1/4 c flour
- 1 t salt
- 1/2 t paprika
- 1/4 t pepper
- 3 T butter
- 1 T olive oil
- 2-4 T Madeira (can use other wines)
- 2-3 T fresh lemon juice
- 3 T capers, drained (optional)
- 3 T parsley, chopped
- 2 T lemon zest
