To-Die-for Carrot Cake

Preheat oven to 350 F. Sift flour again with baking powder, baking soda, salt and cinnamon
- Frosting:
- 2 cups all-purpose flour, sifted
- 2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 teaspoons cinnamon
- 1/2 cup walnuts, chopped
- 1 cup golden raisins (optional)
- 2 cups white granulated sugar
- 4 eggs
- 1 1/2 cups vegetable oil
- 2 cups raw, finely grated carrots
- 1 (8.5 oz.) can crushed pineapple
- 1/2 cup butter, softened
- 1 (8 oz.) pkg. cream cheese, softened
- 1 teaspoon vanilla
- 1 (1 lb.) box powdered sugar, sifted
She Crab Soup

In a large, heavy pot over low heat, melt butter; add flour and blend until smooth
- 2 tablespoons butter, divided
- 2 tablespoons all-purpose flour
- 1 cup milk
- 1 1/2 cups half and half cream
- 4 teaspoons finely-grated onion
- 3/4 teaspoon Worcestershire sauce
- Salt and white pepper to taste
- 1/4 teaspoon ground mace
- 1/4 teaspoon red (cayenne) pepper
- 1/4 teaspoon grated lemon zest (rind)
- 1 1/2 pounds flaked blue crab meat*
- 3 tablespoons dry sherry
- yolks from 2 hard-cooked eggs, crumbled
- 1 tablespoon finely-chopped fresh parsley leaves
One Pot Primavera

In a soup pot, cook pasta according to package directions; drain in a colander and set aside
- 1 pound penne pasta
- 1/4 cup olive oil
- 2 yellow squash, cut into 1/2-inch chunks
- 2 zucchini, cut into 1/2-inch chunks
- 1 onion, chopped
- 4 garlic cloves, minced
- 4 plum tomatoes, sliced
- 1/2 pound sliced fresh mushrooms
- 1 (10-1/2-ounce) can condensed chicken broth
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Chicken Roulade with Mushroom Duxelles

Mushroom Duxelles: Clean mushrooms to remove any dirt using a paper towel
- Mushroom Duxelles (a stuffing made especially of finely chopped sauteed mushrooms):
- 1 tsp fresh basil, finely chopped
- 4 chicken breast halves, skinless and boneless
- 1 dash olive oil
- 1 dash Salt to taste
- 1 dash Freshly ground black pepper to taste
- 4 cups mushrooms; such as shiitake (1 cup), white button (2 cups) and cremini (1 cup)
- 1/2 tsp freshly squeezed lemon juice
- 2 small shallots, finely minced (about 1/4 cup)
- 2 tbsp unsalted butter
- 1 pinch Salt to taste
- 1 pinch pepper to taste
15-Minute Beef Stew

Heat olive oil over medium-high heat and brown steak in 12-inch nonstick skillet
- 1 Tbsp. olive oil or vegetable oil
- 1 lb. boneless sirloin steak, cut into 1-inch cubes

- 1 cup water
