In a mixer add egg whites to vanilla/lemon extract with water and mix until whipped to a foamy consistency
- 3 cups of powdered sugar
- 5 TBSP of water
- 3 drops of lemon or vanilla extract
- 3 oz. of egg whites (about 4 eggs)
Summer Berry Trifle #2

ADD boiling water to gelatin mix in large bowl; stir 2 min
- 1 cup boiling water
- 1 pkg. (6 oz.) Strawberry Flavor Gelatin
- Ice cubes
- 1/2 cup cold water
- 2 cups mixed fresh berries (raspberries, blueberries, halved strawberries)
- 1 pkg. (8 oz.) Cream Cheese, softened
- 1-1/4 cups cold milk, divided
- 1 pkg. (3.4 oz.) Cheesecake Flavor Instant Pudding
- 1 tub (8 oz.) Whipped Topping, thawed
- 1 pkg. (12 oz.) prepared pound cake, cubed
Simple Strawberry Cheesecake

In a bowl mix together sugar and diced or mashed strawberries and let sit in fridge until ready
- 1 package of cream cheese (8oz)
- 3 TBSP powdered sugar
- 1 tsp vanilla extract

Burgandy Beef Stew

- 1 1/2 pounds boneless chuck, cubed
- 2 tablespoons oil
- 2 baking potatoes, chopped into 1/2-inch cubes
- 2 onions, peeled and chopped
- 4 carrots, chopped
- 1 turnip, chopped
- 3 tablespoons all-purpose flour
- 1 cup beef broth
- 1 cup Burgundy wine or beef broth
- 3 bay leaves
- 1 teaspoon fresh basil, chopped
- 1 (14 1/2-oz.) can chopped tomatoes

- 1 (18.25-ounce) package chocolate cake mix
- 1 cup brewed coffee
- 1/3 cup vegetable oil
- 3 eggs
- 2 (16-ounce) containers chocolate frosting
- 4 tablespoons caramel topping
- 8 chocolate-covered caramel candies, chopped
Tangy Barbecued Spareribs

Place ribs in soup pot and add just enough water to cover them
- 5 pounds pork spareribs
- 1 teaspoon salt
- 1/4 cup vegetable oil
- 1 small onion, chopped
- 1 garlic clove, minced
- 2 cups sweetened applesauce
- 1/2 cup ketchup
- 2 tablespoon lemon juice
- 1 tablespoon Worcestershire sauce
- 1 teaspoon prepared yellow mustard
Baked Spaghetti Casserole *(GOOD)*

Preheat to 350 degree oven
- Topping:
- 1 1/2 lbs. ground beef
- 1 onion, chopped (med.)
- 1 tsp. salt
- 1/2 tsp pepper to taste
- 1 tsp. chili powder
- 1 can tomato soup
- 1 can cream of mushroom soup
- 1 can of water
- 1 (16 oz. pkg.) cooked spaghetti (cook only till half done or al dente)
- 1/3 cup catsup
- 1 cup shredded cheddar cheese
Gandule Rice

Wash and cook rice in rice cooker
- 1 lbs.pork - cube in 1" squares
- 1 bunch Cilantro/Chinese Parsley - finely chopped
- 1/2 Medium Green Bell Pepper - finely chopped
- 1/2 Can Goya Brand Green Pigeon Peas (Gandules Verdes)
- 1/2 (6 oz) Can Tomato Paste
- 5 Cups White Rice (Do not use Jasmine, Instant or Brown Rice)
- 1/2 Can Pitted Black Olives (optional)
- 1 cup canned or fresh Chicken Broth
- 2 Cloves Garlic, finely chopped
- 1 1/2 Tablespoons Olive Oil
- Salt, to taste
- 1/2 Tablespoon Cumin
- 1/2 Tablespoon Oregano Leaves
- 1 1/2 Tablespon Achiote Seeds (usually labeled in stores under Annatto Seeds)
- 1/4 Cup Vegetable Oil

- 1 cup peanut butter cups (Reese’s), chopped
- 1/3 cup butter
- 6 ounces semi-sweet chocolate chips
- 3 cups toasted rice cereal (aka Rice Krispies)
