Aunt Peggy's Meat Loaf *(GOOD)*

Preheat the oven to 375 degrees
- 1 pound lean ground beef
- 1/2 (3 ounces) can tomato paste
- 1/2 cup chopped Vidalia onion
- 1/2 cup chopped green bell pepper
- 1/2 cup quick-cooking oats
- 1 egg, lightly beaten
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/3 cup ketchup
- 2 tablespoons packed light brown sugar
- 1 tablespoon Dijon mustard
Sour Cream Chocolate Cake #2

Dissolve cocoa in boiling water; cool
- FROSTING:
- 1 cup baking cocoa
- 1 cup boiling water
- 1 cup butter, softened
- 2-1/2 cups sugar
- 4 eggs
- 2 teaspoons vanilla extract

- 2 teaspoons baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup (8 ounces) sour cream
- 2 cups (12 ounces) semisweet chocolate chips
- 1/2 cup butter, cubed
- 1 cup (8 ounces) sour cream
- 1 teaspoon vanilla extract
- 4-1/2 to 5 cups confectioners' sugar
Quick Chicken Noodle Soup

Preheat the oven to 400 degrees
- for the chicken:
- 2 tsp. olive oil
- 1 pound boneless, skinless chicken breasts
- 1/4 tsp. sea salt
- 1/4 tsp. black pepper
- for the soup:
- 2 tsp. olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 carrots, chopped
- 3 celery ribs, chopped
- 1 tsp. parsley
- 1 tsp. thyme
- 1/2 tsp. sage
- 1/2 tsp. oregano
- 8 cups chicken stock
- 2 bay leaves
- 8 ounces egg noodles
- Salt and pepper to taste

COOKIE: All ingredients should be very cold when making dough
- Cookie:
- 1 cup, 2 sticks salted butter cut into chunks
- 2 cups all purpose flour
- 1/2 teaspoon salt
- 1 1/2 teaspoons baking powder
- 1/3 cup cream
- 1/4 cup granulated sugar + 1/4 cup all-purpose flour (for dusting)
- Optional: one slightly beaten egg white to add pale sheen to baked rounds
- Creamy Frosting:
- 1/2 cup salted butter
- 1 1/4 cups powdered sugar
- 1 1/2 tablespoon cream
- 1/2 tsp vanilla extract
- 1/2 tsp almond extract
