Mix up the pudding mix and milk
- 1 package (1.1 oz. or 4 servings) instant vanilla pudding mix.
- 2 C. no-fat milk
- 1/2 C. of no-fat cool whip, thawed
- 1 tsp. rum or brandy extract ( I use 1 T. rum)
- 1/4 tsp. nutmeg
Frosty Black Russian Pie

Combine cookie crumbs and butter; stir well
- 21 cream-filled chocolate sandwich cookies, finely crushed
- 3 tablespoons butter, melted
- 24 large marshmallows
- 1/2 cup milk
- 1/3 cup coffee liqueur or 1/3 cup strong coffee, chilled
- 1 cup whipping cream, whipped
- Garnish: chocolate curls
Easy Beef Stroganoff

Prepare noodles according to package directions (boil for 8 minutes)
- 1 pound ground beef $2.80
- 1 pound package of extra wide egg noodles $1.89
- 1 Can of condensed beef broth (10 oz.) $1.69
- 1 Tablespoon onion powder .03 cents
- 8 oz. Sour Cream .75 cents
- 1 loaf of bakery Italian bread $1.59
- Parmesan Cheese (for bread) .04 cents
- Vegetable Oil (to toss over noodles) .05 cents

Banana Cream Pie #2

Combine pudding mix and milk and prepare according to package directions
- 1 small box sugar-free vanilla pudding (not instant)
- 1 2/3 cups fat-free milk
- 4 ounces fat-free vanilla yogurt, sweetened with artificial sweetener
- 26 vanilla wafer cookies
- 2 bananas (about 7-inches each) sliced to make about 2 cups
- 1 cup fat-free whipped topping
Cornflake Crusted Halibut with Tomato-Avocado-Corn Relish

Preheat oven to 325 degrees
- For the Fish:
- 4 cups cornflakes
- 1/2 teaspoon paprika
- Kosher salt and freshly ground black pepper
- 1/4 t cayenne pepper
- 3 whole eggs
- 1 egg white
- 4 halibut fillets, 1/2-pound each
- For the Relish:
- 2 ears fresh corn, shucked, kernels cut from the cob, about 1 1/2 cups
- 1 cups cherry tomatoes, halved
- 1 avocado, seeded, peeled, and chopped
- 8 fresh basil leaves, chiffonade, about 1/3 cyo
- 3 tablespoons olive oil
- 1/2 tablespoon red wine vinegar
- 3/4 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
Hawaiian Shrimp or Chicken Curry

Put butter, onion, garlic, and ginger into 2-quart casserole
- 1/4 cup butter
- 1 onion, minced
- 2 cloves garlic, minced
- 1 small piece ginger root, minced
- 1 1/2 tablespoons curry powder
- 5 tablespoons flour
- 1 1/2 teaspoons salt
- 1 can (12 ounces) frozen coconut milk, thawed or 1 can (13.5 ounces) good quality canned coconut milk
- 1 cup chicken broth
- 1 1/2 pounds medium shrimp, shelled and cleaned or 1 1/2 pounds boneless, skinless chicken breast, cubed and cooked
Caramel Corn

Place the popped popcorn into a big bowl, one that is at least twice the volume of the popcorn itself
- 12 cups popped popcorn (about 1/2 cup kernels or about two bags of microwave popcorn)
- 1 cup light brown sugar
- 1/4 cup light corn syrup
- 1/2 teaspoon salt (omit if using salted microwave popcorn)
- 1/2 cup butter
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla
Polynesian Beef Balls

Combine all ingredients and shape about 1 Tablespoon into balls
- 1 1/2 lbs. ground beef
- 3/4 cup quick oats....raw
- 1 5oz. can water chestnuts...drained and chopped fine
- 1 teaspoon accent
- 1/4 teaspoon salt
- 1/4 teaspoon garlic salt, or more to taste
- 1/2 teaspoon onion salt
- 1 Tablespoon soy sauce
- 1 egg
- 1/2 cup milk
Skillet Chicken Divan

1 Melt butter in 10-inch nonstick skillet over medium-high heat
- 1 tablespoon butter or margarine
- 4 boneless skinless chicken breasts (about 1 lb)
- Water called for on brown rice package for 1 cup uncooked rice
- 2 tablespoons Dijon mustard
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 cup uncooked quick-cooking brown rice
- 3 cups frozen broccoli florets, thawed
- 1/2 cup shredded Cheddar or American cheese (2 oz)
Beer Bread & Creamy Herb Dip

- BEER BREAD:
- Nonstick cooking spray
- 3 cups all purpose flour
- 2 tablespoons sugar
- 1 teaspoon salt
- 1 tablespoon baking powder
- 1 (12-ounce) bottle beer (I used Sam Adams Winter Lager)
- 2 tablespoons honey, at room temperature
- 1/2 cup margarine, melted
- HERB DIP:
- 8 ounces fat free cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- Fresh or dried dill, to taste
- Fresh or dried parsley, to taste
- Fresh or dried chives, to taste
