POLLO GUISADO

1. Season chicken with adobo, garlic powder, cumin and oregano and marinate it 2 hours or overnight
- 3 large bone-in breasts, cut up in chunks) or 1-2 lbs of chicken pieces
- Adobo Goya (or to taste)
- Garlic powder
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1/4 cup canola oil
- 5 tablespoons sofrito (click here for the recipe)
- 1 8-oz can tomato sauce
- 1/2 cup olives, pitted with pimentos
- 2-3 sprigs of cilantro
- 3 large carrots, sliced (if desired)
- 3 potatoes, cubed
- Salt to taste
Healthy White Chicken Chili

Heat oil in a large saucepan over high heat; add chicken and cook 4 to 5 minutes, stirring often
- 1 T. olive oil
- 1 lb. boneless, skinless chicken breasts, cubed
- 1/4 c. onion, chopped
- 1 c. chicken broth
- 4-1/2 oz. can chopped green chiles
- 1 t. garlic powder
- 1 t. ground cumin
- 1/2 t. dried oregano
- 1/2 t. dried cilantro
- 1/8 t. cayenne pepper
- 19-oz. can cannellini beans
- Garnish: shredded Monterey
- Jack cheese
Mini S'mores Hand Pies

Heat oven to 425°F. Line cookie sheet with cooking parchment paper
- 1 box refrigerated pie crusts, softened as directed on box
- 1/2 cup graham cracker crumbs (8 graham cracker squares, finely crushed)
- 1/4 cup sugar
- 3 tablespoons butter, melted
- 1/2 cup marshmallow creme
- 2 tablespoons cream cheese, softened (1 oz)
- 2 tablespoons sugar
- 1/2 cup chocolate chips
Dijon Chicken Breasts

Preheat oven to 400 degrees
- 4 boneless, skinless chicken breast halves
- 2 tablespoons Dijon-style mustard
- 1 tablespoon brown sugar
- 1 tablespoon lemon juice
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon salt
Catfish Pecan

1. Cut fish into 4 portions
- 1 to 1-1/4 pounds catfish fillets (1/2 to 3/4 inch thick)
- 1/4 cup fine dry bread crumbs
- 2 tablespoons cornmeal
- 2 tablespoons grated Parmesan cheese
- 2 tablespoons ground pecans
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup all-purpose flour
- 1/4 cup milk
- 2 to 3 tablespoons cooking oil
- 1/3 cup chopped pecans
Cuban Arroz con Pollo

Wash chicken and blot dry with paper towels
- Sofrito and broth:
- 1 large chicken, skinned, about 4 pounds, cut into 8 pieces.
- 1 tablespoon dried oregano
- 1 tablespoon ground cumin
- 1/2 tsp freshly ground white pepper
- 1 Tbsp red wine vinegar
- 2 Tbsp Annatto oil or olive oil
- 1 small onion, finely chopped
- 1 small red bell pepper, cored, seeded and finely chopped
- 3 cloves garlic, minced
- 1 small tomato, seeded and diced
- 1/2 cup dry white wine
- 3/4 cups beer
- 1/2 tsp annatto seeds, or 1/4 tsp saffron threads
- 1 Tbsp tomato paste
- 1 tablespoon salt
- 1/2 teaspoon freshly ground black pepper, to taste
- 3 cups rice
- Sliced red pimientos for garnish
- 1 cup frozen green peas (Petit Pois) for garnish
