Taco Pasta Casserole

Brown and drain the ground beef
- 1 pound ground beef
- 1 package pasta shells
- 1 block of cream cheese
- 1 cup of taco sauce
- 1 cup of shredded cheddar cheese
- 1 cup of crushed tortilla chips
- 1 teaspoon of chili powder
- Salt to taste
Pina Colada Cupcakes #3

1. Preheat oven to 350 degrees
- 1 box pineapple cake mix (if pineapple’s unavailable, golden butter or yellow works)
- 3 eggs
- 1/3 cup unsweetened applesauce
- 1 8-oz can crushed pineapple, juice drained but reserved in a measuring cup to measure approximately 1/2 cup
- 1 box coconut cream instant pudding mix
- 1/2 cup, plus 1 Tablespoon shredded coconut
Chocolate Bonbon Pops

1. In large food processor bowl combine cookies and 3/4 cup of the nuts; pulse until cookies are crushed
- 18 chocolate sandwich cookies with cream filling
- 1 1/2 cups pecans, toasted
- 2 Tbsp. orange liqueur or orange juice
- 1 Tbsp. light color corn syrup
- 2 Tbsp. unsweetened cocoa powder
- 20 lollipop sticks
- 1 (12-oz.) pkg. milk chocolate or semisweet chocolate pieces
- 1 Tbsp. shortening
Peppermint Bark

- 2 12 ounce bag white chocolate chips
- 1 cup peppermint candies, unwrapped
Scallion Cream Cheese Poppers

In a small bowl, mix cream cheese, scallions, salt and pepper
- 8 oz cream cheese, softened
- 2 scallions (green onion) chopped very fine
- 1/2 tsp pepper
- 1/2 tsp salt
- 12 egg roll skins
- oil for frying
- water for sealing egg roll skins
Shrimp and Crab al Forno

1. Heat oven to 350 degrees
- 8 ounces (1 1/3 cups) orzo
- 2 tablespoons unsalted butter
- 3 shallots, finely diced (about 1/2 cup)
- 4 cloves garlic, chopped
- 2 tablespoons all-purpose flour
- 2 cups 1% milk
- 1 tablespoon fresh lemon juice
- 1 tablespoon lemon zest
- 1 cup grated Parmesan
- 1/2 pound peeled and deveined raw shrimp
- 8 ounces lump or claw crabmeat (such as Phillips)
- 1/2 cup fresh parsley, chopped
- 1/2 teaspoon salt
- 1/8 teaspoon ground cayenne
White Chocolate Coconut Cake

In large bowl, combine cake mix, water, 3/4 cup cream of coconut and egg whites; beat on low speed for 30 seconds
- 1 package (18-1/4 ounces) white cake mix
- 1 cup water
- 1 can (15 ounces) cream of coconut, divided
- 3 egg whites
- 1 can (5 ounces) evaporated milk
- 2/3 cup vanilla or white chips
- 2 ounces cream cheese, softened
- 1 cup heavy whipping cream, divided
- 3-1/2 cups flaked coconut, divided
- 2 teaspoons Spice Islands® pure vanilla extract
- 1/4 cup sugar
Italian Beef

Mix together water, gravy mix, dressing and Italian seasoning
- 1-3 pound rump roast, trimmed -- (3 to 5 pounds)
- 1 package Good Seasons Italian Dressing Mix
- 1 cup water
- 1 package au jus gravy packet
- 2 teaspoons Italian seasoning
- 6 pepperoncini peppers

- 2 cups all purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 sticks (3/4 cup) unsalted butter, cut into tablespoons
- 1 cup packed dark brown sugar
- 2 eggs
- 1/2 cup shredded coconut
- 2 teaspoon vanilla extract
- 10 ounces white chocolate, coarsely chopped
- 1 cup coarsely chopped pecans
