Chinese Beef Casserole

In a large skillet, cook the beef, onion and celery over medium heat until meat is no longer pink; drain
- 2 pounds ground beef
- 1 cup chopped onion
- 1 cup chopped celery
- 2 cans (10-3/4 ounces each) condensed cream of mushroom soup, undiluted
- 1 can (14 ounces) bean sprouts, undrained
- 1/4 cup reduced-sodium soy sauce
- 1/2 teaspoon pepper
- 1 cup uncooked long grain rice
- 1 can (8 ounces) sliced water chestnuts, drained
- 2 cups frozen peas, thawed
- 1 can (5 ounces) chow mein noodles
Crumb Boss SNICKERDOODLE

Cream butter and sugar. Add eggs one at a time and blend
- Cinnamon/Sugar:
- 8 oz Butter
- 1 1/2 c Sugar
- 1 tsp Van X
- 2 Large Eggs
- 2 3/4 c AP Flour
- 1 1/2 tsp Baking Powder
- 1/4 tsp Salt
- 1 T Cinnamon
- 1 cup Sugar
My Mother's Meatloaf

Mix all ingredients together with hands except for slices of bacon
- 1 1/2 pounds of ground beef
- 1 1/2 pounds of ground pork
- 7 slices of white bread broken up with fingers
- Salt and pepper to taste
- 1 egg
- 2 Tablespoons onion soup mix
- 1/2 can cream of mushroom soup
- 2 Tablespoons of Catsup
- 1/8 teaspoon of thyme
- Bacon
Mississippi Mud Cake

Preheat the oven to 350 degrees F
- Mississippi Mud Filling:
- Nonstick baking spray flour
- 3 cups sugar
- 1 cup butter, melted
- 3 large eggs
- 1 teaspoon vanilla extract
- 2 3/4 cups all-purpose flour
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 1/4 cups unsweetened cocoa powder
- 1 1/2 cups whole buttermilk
- 1 1/2 cups boiling water

- Chocolate Cream Cheese Frosting, recipe follows
- 1 1/2 cups miniature marshmallows, for garnish
- 3/4 cup chopped toasted pecans, for garnish
- 1/4 cup special dark fudge sauce, for garnish
- 1 (8-ounce) container frozen nondairy whipped topping, thawed
- 1 (7-ounce) jar marshmallow creme
- 4 ounces cream cheese, softened
- 1 cup toasted and chopped pecans
- Chocolate Cream Cheese Frosting:
- 1 cup butter, softened
- 1 (8-ounce) package cream cheese, softened
- 1 (9.7-ounce) box bittersweet chocolate, melted and cooled

Crockpot Black Bean Chili with Lime and Cilantro *(GOOD)*

Heat olive oil in heavy frying pan, add chopped onions and saute 4-5 minutes, until softened and barely starting to...
- 2 large onions, finely chopped
- 1 lb. extra lean ground beef
- 1 quart beef stock, simmer to reduce to 2 cups (I used my homemade beef stock, but you can use two cans beef broth. Don't reduce for stovetop cooking.)
- 3 cans (15 oz.) black beans, rinsed and drained
- 1 can (15 oz.) refried pinto beans
- 2 cans (14.5 oz.) petite dice tomatoes
- 2 T dried cilantro
- 2 T chile powder (preferably New Mexico chile powder)
- 2 T Ancho chile powder (or 2 T more regular chile powder)
- 1 T ground cumin
- 1/4 cup fresh squeezed lime juice, plus sliced limes to squeeze into chili if desired
- 1/2 cup chopped fresh cilantro, plus more for garnish if desired
- low-fat sour cream for serving if desired (optional)
Hamburger Helper Chicken Cacciatore

- 1 tablespoon butter or margarine
- 1 pound chicken breasts, boneless, skinless, cut into 1-inch pieces
- 1 medium green bell pepper, cut into small bite-size strips
- 1 box Hamburger Helper® four cheese lasagna
- 1 1/2 cups hot water
- 1 (14.5-ounce) can diced tomatoes, undrained
- 1 (14-ounce) can mushroom stems and pieces, drained
- 1/4 cup Parmesan cheese, grated

- 3/4 cup egg substitute

- 1 pound beef top sirloin steak, cut into thin strips
- 4 tablespoons butter, divided
- 1 cup sliced fresh mushrooms
- 1/2 cup chopped sweet onion
- 1 garlic clove, minced
- 1 tablespoon tomato paste
- 1-1/4 cups beef broth
- 1 cup (8 ounces) sour cream
- 2 tablespoons sherry or beef broth
- Hot cooked egg noodles or brown rice

- 1 tbsp. GOYA® Recaito
- 1 tsp. Whole Oregano Leaf
